Yummy Christmas Snack Recipe

Caramel Chex Snack

8 cups of chex cereal, I used rice and the recipe called for chocolate...you decide

3/4 c. brown sugar
5 tablespoons butter
3 tablespoons light corn syrup
1/4 teaspoon of baking soda

Line a cookie sheet with parchment paper or butter the pan well and set aside.  Measure out chex into a large mixing bowl.  Mix sugar, butter and syrup in a microwave safe bowl.  Microwave on high for 2 minutes, stirring half way thrugh.  Remove from microwave and stir well gradually adding the baking soda.  Pour sugar mixture over cereal and gently stir.  Quickly pour onto cookie sheet and let cool for 10 minutes.  If you like you can melt 1/4 of a cup of chocolate chips and drizzle ove the cereal.  Break into pieces and you have a YUMMMMMMMY snack or gift!

Kitchen Tip #9

For fresher tasting corn, add 1/2 t. of sugar to boiling water and then add corn.  The sugar will bring out the natural sweetness of the corn even if it is frozen or canned. Have a blessed day!

Kitchen Tip #8

For crispier fried potatoes, soak cubed potatoes in a mixture of ice, water and salt for 30 minutes prior to cooking.  Drain the potatoes and then place in pan.  Also use shortening instead of oil, for some reason the potatoes soak up less shortening than oil during cooking.  Enjoy!

Kitchen Tip #7

Hello!  I hope everyone had a great Thanksgiving and is now in the full spirit of Christmas.  My tip for today will help you have a beautiful fruit tray to take to all of your parties this holiday season.  After cutting apples, grapes and bananas rinse them in Sprite or 7-up.  This will keep them from turning brown.

Kitchen Tip #6

Well....it's good to be back after having no internet for 5 days!  Ugh.  Anyway, I hope you all are doing well and enjoying the Fall weather.  My tip for today involves sneaking vegetables into your child's food.  SSSHHHH!  A good way to add extra nutrition to your spaghetti is to puree a yellow or zuchinni squash in the blender and then stir it right into the sauce as you are cooking it.  The squash will absorb the flavor of the tomatoes and also has the same texture.  Try it!!!

Kitchen Tip #5

To get the smell off your hands from chopping onions, just pour some lemon juice over them and rub your hands together.  Rinse with cool water and the smell should be gone!

Weekend Kitchen Tip

I hope everyone is having a great weekend.  The tip I have for today is to help you clean your microwave without harsh chemicals.

Take 2 oranges and cut them into 4 sections each.  Fill a microwave safe bowl about 2/3 full of water and place orange in water.  Put in microwave for at least 2 minutes and 30 seconds (long enough for the water to boil).  Leave bowl in microwave for 20-30 minutes depending on how dirty your microwave is...mine usually requires 30 : ).  Remove the bowl and wipe down the inside of your microwave.

You can also clean your garbage disposal with the cooked oranges and water.  Simply turn your disposal on and pour the oranges and water down the drain.  It will leave your sink smelling fresh.

Kitchen Tip #3

To keep cakes or cupcakes from sticking to the pan, mix equal amounts of Crisco and Flour together and generously apply to bottom and sides of pan with a paper towel.

Kitchen Tip #1

Good Morning!  After much indecision, I decided that today I would start providing my fellow bloggers with at least on kitchen tip per day. Some of these tips will make you go hhmmm and some will make you say "Why didn't I think of that."   So here goes...

Kitchen tip #1 - You can bake pancakes in the oven by spraying a cookie sheet with cooking spray and baking at 425 degrees for 10-12 minutes.  Once they are nice and fluffy just use a pizza cutter to cut the number of pancakes you need and serve.  Now everyone can enjoy breakfast together and you don't have to flip 25 pancakes before you get to eat!
