Yummy Christmas Snack Recipe

Caramel Chex Snack

8 cups of chex cereal, I used rice and the recipe called for chocolate...you decide

3/4 c. brown sugar
5 tablespoons butter
3 tablespoons light corn syrup
1/4 teaspoon of baking soda

Line a cookie sheet with parchment paper or butter the pan well and set aside.  Measure out chex into a large mixing bowl.  Mix sugar, butter and syrup in a microwave safe bowl.  Microwave on high for 2 minutes, stirring half way thrugh.  Remove from microwave and stir well gradually adding the baking soda.  Pour sugar mixture over cereal and gently stir.  Quickly pour onto cookie sheet and let cool for 10 minutes.  If you like you can melt 1/4 of a cup of chocolate chips and drizzle ove the cereal.  Break into pieces and you have a YUMMMMMMMY snack or gift!

Kitchen Tip #9

For fresher tasting corn, add 1/2 t. of sugar to boiling water and then add corn.  The sugar will bring out the natural sweetness of the corn even if it is frozen or canned. Have a blessed day!

Kitchen Tip #8

For crispier fried potatoes, soak cubed potatoes in a mixture of ice, water and salt for 30 minutes prior to cooking.  Drain the potatoes and then place in pan.  Also use shortening instead of oil, for some reason the potatoes soak up less shortening than oil during cooking.  Enjoy!
